Peanut free recipes - sweet treats

Just a few recipes. I know its tough sometimes to find alternatives, keep a rotation of sweets available without eating the same treats all the time!


Eggless cake:

3 c. flour, 2 c. sugar, 1 tsp. salt, 2 tsp. baking soda, 6 tbsp. cocoa (I use Fry's) 3/4 c. vegetable oil (I use olive), 2 c. water, 2 tbsp. vinegar, 1 1/2 tsp. vanilla

Preheat oven to 350 F. Sift all dry ingredients twice.  Put in ungreased 9x12 dish.  Make three wells in the dry ingredients.   Pour vanilla in one well, Vinegar in one, and the oil in the last well.  Pour water over.  Stir lengthwise with a fork until mixed.  Bake at 350F for 30 minutes.


Oatmeal muffins:

1 1/2 c. milk (I use almond milk) 1 1/4 c. quick oats, 1 egg, 1/2 c. vegetable oil (I use olive), 1 1/4 c. flour, 1/8 c. sugar, 2 1/4 tsp. baking powder, 3/4 tsp. salt, 1/4 c. flax

Preheat oven to 425f, grease or line muffin tin.  In a small bowl combine milk and oat soak for 15 minutes, in a separate bowl beat the egg and oil after 15 minutes combine the two bowls.  Sift in the remaining dry ingredients and mix.  Bake 20 minutes.


Pumpkin squares:

4 eggs, 3/4 c. sugar, 1 cup vegetable oil (I use olive), 1 tsp. vanilla, 2 c. of pureed pumpkin, 2 c. flour, 1 tsp. baking soda, 2 tsp. baking powder, 1/2 tsp. salt, 2 tsp. cinnamon, 1 tsp. nutmeg

Preheat oven to 350F. Mix eggs, sugar, vanilla and oil.  Add pumpkin and mix well.  Combine the dry ingredients in a bowl and then add to wet ingredients.  Bake in a 9x12 dish for 25 minutes.  *For cupcakes bake for 20 minutes.
